Chicken Wonton Soup
Course: Main Course
Ingredients
Filling:
  • 1 lb. ground chicken or pork
  • 1 Tbsp Tamari soy sauce
  • 1 1/2 tsp fresh gingerroot, grated
  • 1 1/2 tsp minced fresh garlic
  • 2 green onions, finely chopped
  • 1/2 tsp sesame oil
  • About 35 wonton skins
Soup:
  • 6 cups chicken stock
  • 2 tsp Tamari soy sauce
  • 2 cups sliced bok choy
  • Fresh limes
Instructions
  1. Combine all the ingredients for the filling and mix well.
  2. Place a small spoonful of the filling in the corner of each wonton skin. Dampen the edges with water and gather up the wonton skin to form a pouch enclosing the filling. (Or fold one corner of the wonton to meet the opposite corner, forming a triangle, then pinch together the two corners of the long side of the triangle.)
  3. Bring the broth to a boil. Add in wontons, one by one, and reduce heat to medium. Cook wontons for 5 minutes.
  4. Add in tamari and sliced bok choy and serve the soup and wontons once the wontons float to the top of the both. Garnish each serving with a squeeze of lime.
