Chicken Wonton Soup

Ingredients
Filling:
- 1 lb. ground chicken or pork
- 1 Tbsp Tamari soy sauce
- 1 1/2 tsp fresh gingerroot, grated
- 1 1/2 tsp minced fresh garlic
- 2 green onions, finely chopped
- 1/2 tsp sesame oil
- About 35 wonton skins
Soup:
- 6 cups chicken stock
- 2 tsp Tamari soy sauce
- 2 cups sliced bok choy
- Fresh limes
Instructions

Combine all the ingredients for the filling and mix well.

Place a small spoonful of the filling in the corner of each wonton skin. Dampen the edges with water and gather up the wonton skin to form a pouch enclosing the filling. (Or fold one corner of the wonton to meet the opposite corner, forming a triangle, then pinch together the two corners of the long side of the triangle.)

Bring the broth to a boil. Add in wontons, one by one, and reduce heat to medium. Cook wontons for 5 minutes.

Add in tamari and sliced bok choy and serve the soup and wontons once the wontons float to the top of the both. Garnish each serving with a squeeze of lime.
