Buffalo Cauliflower Bites

You like Buffalo wings?  Let's not pretend that chunks of cauliflower could ever replace them, but maybe these imposters may actually make you realize that plants can taste pretty darn delicious, covered in a blanket of spicy, buttery sauce.  Plus a little roasty crunch factor to boot?  Oh ya.  Mama love.  Bring these to your next Superbowl party for the veggie lovers...just don't make them compete right next to the chicken wings.  That's mean.

Ingredients
  • 2/3 cup any flour (I actually prefer rice)
  • 2/3 cup soda water, light beer or milk
  • 1 tsp fine sea salt
  • 2 tsp garlic powder
  • 1 tsp smoked or sweet paprika
  • 1/2 tsp fresh ground black pepper
  • 1 head cauliflower cut into florets, about 1 1/2-2 inch big
  • 1/4 cup Louisiana-style hot sauce (aka Franks)
  • 3 tbsp butter can use coconut oil
  • 2 tsp honey
Instructions
  1. Preheat oven to 425 deg F.  If you have convection, set to 400 deg F convection.  Line a large rimmed sheet pan with parchment paper.

  2. Whisk together flour, soda water, salt, garlic powder, paprika and pepper together in a large mixing bowl.  Add cauliflower and toss and until well coated.  Transfer to prepared sheet pan and spread out to form one layer.  Do not crowd them!  Bake in oven, tossing once, for 20 minutes.

  3. Meanwhile, heat hot sauce, butter and honey over low heat or in microwave until butter melted and honey dissolved.  Whisk together to combine.

  4. Brush half of hot sauce mixture over cauliflower and return to oven for 5 to 7 minutes, or until starting to caramelize and get crisp on top.  Toss cauliflower and brush remaining mixture over 'naked' side.  Return back to oven and bake for another 5-7 minutes.  Cauliflower should look golden-red, crispy bits around edges and smelling sooooooo Buffalo-ey good :)  

  5. Allow to cool for a few minutes then transfer to serving platter.  Serve with something cool and creamy, like a good quality ranch dip or tzatziki sauce.  

Recipe Notes

Easy dipping sauce: Mix equal parts plain Greek yogurt with roasted garlic and herb mayo (Farm Boy has a good one), a squeeze of lemon juice and a good pinch each salt and pepper.
