Sugar Cookies (no chill cut-outs)
These cookies were made for decorating! Keep the kids busy, no waiting to chill the dough, and get creative with these simple cut outs that are also SO DELISH. You CAN make a pretty cookie taste just as good 🙂
Ingredients
- 1 cup salted butter at cold room temperature*
- 1 1/2 cups granulated sugar
- 1 large egg
- 2 tsp pure vanilla extract
- 2 3/4 cups all-purpose flour plus extra
- 2 tsp baking powder
- 1/2 tsp fine sea salt
- Favourite Cookie Cutters
Instructions
-
Preheat oven to 400°F. Line baking sheets with parchment paper.
-
Cream butter with sugar until light and fluffy. Beat in egg and vanilla until smooth.
-
Whisk together flour, baking powder, and salt in a separate bowl; add to butter mixture, 1 cup at a time, mixing after each addition, until fully incorporated.
-
Divide dough into two balls. On a floured surface roll each ball into a circle approximately 10” wide and 1/4″ thick. Dip cookie cutter in flour and cut out cookies. Gather any remaining dough scraps into a ball to roll and cut out remaining cookies.
-
Transfer cookies to prepared baking sheets, spacing them out 2” apart. Bake each batch, one at a time, middle oven rack, for 6 – 7 minutes or until cookies are very lightly browned around edges.
-
Cool cookies for 5 minutes before transferring to cooling rack. Cool completely before decorating, following the inspirational pictures below.
-
Makes about 24 cookies. Store cookies in air-tight container for up to 5 days or in freezer for up to 3 months.
Recipe Notes
Optional add-ins for flavour:
• Replace vanilla extract with 1 tsp almond extract
• Add 1 Tbsp finely grated lemon or orange zest to flour mixture
• Add 3/4 tsp cinnamon or cardamom powder to flour mixture
*Cold room temperature refers to butter not being in a room that is too warm where it becomes very soft. Place butter in coolest part of kitchen (not fridge), away from stove, and on counter.
