Easy Mexi Guacamole

Sigh.  If you’re an avocado lover then there’s nothing quite like a fresh guac with crispy corn chips (and maybe an ice cold beer or lime margarita!).  Be sure to use ripe avocados.  How do you know if it’s ripe?  Hold the avocado in the palm of your hand. Gently squeeze the avocado, being careful not to press with your fingertips, as this can cause bruising. A ripe avocado will be soft and will yield to the gentle pressure, but will not be overly squishy.

 

Fresh Mexi Guacamole
Course: Appetizer
Ingredients
  • 2 medium ripe avocados* mashed with a fork
  • 1 tbsp. minced red onion and/or 1 tsp minced garlic
  • 1/2 tsp fine sea salt
  • Juice of 1/2 lime
  • 1 tbsp finely chopped fresh cilantro optional
  • 1/2 tsp ground cumin
  • 1-2 tbsp finely chopped jalapeno optional
Instructions
  1. Combine ingredients and mix well. Serve with organic corn chips, rice crackers or fresh raw veggies for scooping. 

Recipe Notes

What is a ‘ripe’ avocado? A ripe Hass (most common and available variety) avocado is black on outside, has a firm-soft feel when gently pressed with thumb and a yellow-green flesh colour inside. Place a green avocado beside some bananas to quicken it’s ripening!
