Applesauce n’ Cinnamon Muffins
For snacking or a breakfast on-the-go, these little gems burst with fruity flavour from both apples and olive oil! These are a morning hit in my house, rounding out a continental meal with hard boiled eggs and fresh fruit. Win!
- 1 1/2 cups apple sauce, any kind, homemade or jarred
- 3/4 cup brown or coconut sugar
- 1 egg
- 1/3 cup extra virgin olive oil
- 1 tsp vanilla
- 1 cup oat flour* (grind rolled oats in blender!)
- 1/2 cup each whole-wheat and all-purpose flour
- 2 tsp baking powder
- 1/2 tsp fine sea salt
- 2 tsp cinnamon

Preheat oven to 375 deg F. Stir together apple sauce, sugar, egg, oil and vanilla until thoroughly mixed.

Whisk together all 3 flours with baking powder, salt and cinnamon in separate bowl. Stir into applesauce mixture until just combined. Don’t overmix!

Divide and scoop out muffins into a greased 12-cup muffin tray. Each muffin cup should be filled about 2/3, leaving room for rising.
NOTE: greasing the pan, instead of using paper muffin liners, will allow more heat to hug each muffin and result in a better rise plus a golden brown exterior.

Bake muffins for 18-20 minutes, or until toothpick inserted into centre of muffin comes out clean. Cool for 20 minutes before removing each one from pan.
Muffins will keep at room temp in sealed container for 3 days, otherwise freeze for snacking later 😊
*Sub in almond flour for oat, either 50/50 with oat or 100% almond.
